Creamy Herbed Lamb Casserole
Ingredients
6 lamb leg chops
¼ cup flour
2 tblspns chopped fresh rosemary
2 tspns dry mustard
30g butter or margarine
2 medium onions, finely chopped
4 bacon rashers,
chopped½ cup chopped celery
1 cup white wine
1½ cups chicken stock
½ cup cream
¼ cup chopped parsley
Method
1. Coat chops with combined flour rosemary and mustard.
2. Melt butter in a large frypan, add onions and next 2 ingredients, saute 3 minutes, remove to a casserole dish. Add chops to pan, cook till well browned, add to onion mixture. Stir next 2 ingredients into casserole mixture. Cover.
3. Bake in a moderately slow oven 160°C for 1 hour or till chops are tender. Fold in cream and parsley.
4. Serve with baby potatoes and seasonal green vegetables.
Serves 4-6
