Creamy Herbed Lamb Casserole

Ingredients
6 lamb leg chops
¼ cup flour
2 tblspns chopped fresh rosemary
2 tspns dry mustard
30g butter or margarine
2 medium onions, finely chopped
4 bacon rashers,
chopped½ cup chopped celery
1 cup white wine
1½ cups chicken stock
½ cup cream
¼ cup chopped parsley

Method
1. Coat chops with combined flour rosemary and mustard.
2. Melt butter in a large frypan, add onions and next 2 ingredients, saute 3 minutes, remove to a casserole dish. Add chops to pan, cook till well browned, add to onion mixture. Stir next 2 ingredients into casserole mixture. Cover.
3. Bake in a moderately slow oven 160°C for 1 hour or till chops are tender. Fold in cream and parsley.
4. Serve with baby potatoes and seasonal green vegetables.

Fettucine Carbonara

Fettucine Carbonara

Ingredients
4 bacon rashers, chopped

1 large onion, chopped

250g mushrooms, sliced

300ml cream2 eggs, lightly beaten

1/3 cup grated Parmesan cheese

¼ cup chopped parsley

¼ tspn ground black pepper

¼ cup white wine

Cooked fettucine, for serving


Method
1. Saute first 3 ingredients.

2. Mix in remaining ingredients, heat gently - do not boil.

3. Serve sauce folded through hot pasta.


Mini Carrot Cakes


Mini Carrot Cakes
Ingredients
1 cup self-raising flour
1/2 cup wholemeal self-raising flour
1 tspn cinnamon
1/3 cup brown sugar
2 eggs, lightly beaten
1/2 cup buttermilk
1/4 cup oil1 tspn vanilla essence
1 1/3 cups grated carrot
1/2 cup chopped walnuts

Icing:
60g light cream cheese
1 cup sifted icing sugar
1/2 tspn vanilla essence

Method:
1. Grease 12 muffin pans with melted butter or line with patty papers.
2. Sift flours and cinnamon in a bowl, stir in brown sugar.
3. Stir in combined eggs, buttermilk, oil and vanilla essence. Mix in carrot and walnuts.
4. Spoon mixture into muffin pans and bake in a moderate oven 180C for 20 minutes or until golden brown. Cool.
5. Beat cream cheese, icing sugar and vanilla until combined and spread a teaspoonful on top of each cake.
